Growing Location
Hilly zone of Trentino.

Grape Variety
Chardonnay, Pinot Blanc and Muller-Thurgau. Harvest at the beginning of September.

Technological reference
Sparkling processing method in autoclave (stainless steel tank). The must is preserved in refrigerated tanks at the temperature next to 0° C and it is put directly in autoclave where it ferments at 14°-15° reaching its sparkling evolution in 30 – 35 days. Refrigeration, filtration and sterile bottling. Refining in bottle for 2-3 months.

Chemical Characteristics
Liquid with acid pH, composed of water, ethil alcohol, superior alcohol, sugars, extracts, acids, salts, metals. Pressure: 4.00 – 4.50 atm. at 20°C.

Organic Characteristics
Sight: At sight it is brilliant straw-yellow. Fine grain perlage with abundant and persistent foam. Bouquet: it introduces a balanced sensation, pleasantly flowery. Taste: immediate, slightly soft and of winning lightness.

Pairing
It is a pleasant aperitif, a cocktail partner and a disengaged sparkling wine.
